Clover Honey: Captured here in this lovely Georgia setting by my beautiful wife, Sherri, you can see the clarity of our honey (in glass bowl). Tennessee honey is primarily produced from nectar that the honeybees have foraged from white clover. It produces a very sweet tasting, medium to dark colored honey.
Sourwood Honey: Sourwood honey is produced from the nectar of the Sourwood tree (pictured at right, and also known as the Lilly of the Valley or Sorrel tree), which grows in the higher elevations (above 2000') of North Carolina and other mountainous areas. It is a clear to light colored, very smooth, sweet tasting honey. It is not overpoweringly sweet, though. Creamed Honey: Creamed honey is produced by using a "starter (much like a homemade bread starter)" of crystallized honey, and it is whipped with clover and other honeys. The mixture is bottled and refrigerated for a short period of time which produces a white, spread-able honey that is just as tasty as regular honey but with a totally different consistency.
